Why There Are Mushrooms in Our Chakhokhbili

Not traditional. Still delicious. This is how one small deviation became part of our version.

We started in the usual direction

Chicken, a lot of onion, tomatoes, garlic and fresh herbs — the structure stayed recognizably chakhokhbili.

Then came the mushrooms

Mushrooms are not a classic part of the dish, but we added them anyway. They cooked with the onion stage and became part of the sauce instead of feeling like a garnish added at the end.

Four large tomatoes

The tomato question became practical: peel them, then chop or crush them into the pot. We used four large tomatoes in the actual batch.

Salt and reduction

Salt went in after the tomatoes. Near the end the sauce still carried more liquid than we wanted, so the lid came off for roughly the final ten minutes.

The verdict

The note from the stove was simple: the sauce tasted good. That is enough reason for this mushroom version to stay in the archive as our version, not as a claim about tradition.
